Introduction to Cuban Mojo Chicken

Cuban Mojo Chicken is not just a meal; it’s a vibrant celebration of flavor that transports you straight to the streets of Havana. Picture summery days, the warmth of the sun brushing against your skin, and the alluring aroma of citrus and garlic wafting through the air. The essence of Cuban Mojo Chicken lies in its marinade, a bold concoction of sour orange juice, garlic, and spices that brings the chicken to life. This dish reflects the soul of Cuban cuisine—rich, storied, and made with love.

What sets Cuban Mojo Chicken apart is its deeply marinated meat, which not only tenderizes but infuses each bite with a punchy, tangy flavor. Historically, “mojo” refers to a sauce made with citrus and garlic, and it can take on infinite variations, showcasing the region’s diversity. Whether you’re grilling, baking, or slow-cooking, this dish invites creativity while remaining rooted in tradition.

What is Cuban Mojo Chicken?

At its core, Cuban Mojo Chicken is a marinated chicken dish that’s crafted to deliver layers of flavor with every bite. The term “mojo” comes from the words “mojar,” meaning to soak or moisten, perfectly describing the marinating process that binds flavors together.

The marinade is an essential part of the recipe, featuring:

  • Sour Orange Juice: This tart and fragrant juice is critical to the marinade’s success, providing that distinctive Cuban zest. If sour oranges are hard to find, a mix of orange and lime juice works wonderfully as a substitute.

  • Garlic: This powerhouse ingredient not only adds flavor but also offers health benefits. It’s known for its anti-inflammatory properties, making it a staple in many cuisines.

  • Spices: Cumin, oregano, and sometimes bay leaves meld together to evoke the warm, earthy notes characteristic of Latin cooking.

The resulting dish is so delicious and comforting that it’s perfect for a weeknight dinner or a festive gathering. Preparing this meal allows you to delve into a piece of culinary history while offering your friends and family an unforgettable dining experience. So, let’s roll up our sleeves and explore how to recreate this flavorful classic from the comfort of your kitchen.

Key Ingredients for Cuban Mojo Chicken

Cuban Mojo Chicken is a culinary adventure that brings a vibrant burst of flavors directly from the heart of Cuba. This dish relies heavily on its key ingredients, which are essential for crafting that authentic mojo flavor profile we all crave.

Chicken

Starting with the star ingredient, I opt for bone-in, skin-on chicken pieces. This choice not only adds richness but also keeps the meat succulent and juicy as it cooks. If you prefer, skinless chicken can work—just keep an eye on the cooking time.

Citrus Juices

The standout feature of Cuban Mojo Chicken is its marinade, which primarily includes fresh orange and lime juice. These citrus juices provide a bright acidity that tenderizes the chicken while infusing it with a delicious tang. Make sure to use freshly squeezed juices whenever possible for that zesty kick!

Garlic

Garlic is another essential player in this recipe. Use whole cloves to create a robust flavor that permeates the chicken. Roasting the garlic slightly before blending can enhance its sweetness and depth.

Herbs and Spices

Incorporating cumin, oregano, and bay leaves really elevates the marinade. These spices are traditional in mojo sauce, offering a warm, earthy base that complements the citrus beautifully.

Olive Oil

A generous drizzle of olive oil not only helps the marinade cling to the chicken but also adds a luxurious mouthfeel, making every bite deliciously satisfying.

With these key ingredients, you’re well on your way to creating a mouthwatering Cuban Mojo Chicken that’s sure to impress everyone at your dining table.

The standout feature of this recipe is its mojo marinade. Consisting of freshly squeezed lime and orange juice, garlic, and a blend of spices, it’s a game-changer. Tips for Making Perfect Cuban Mojo Chicken

Bringing together the rich flavors of Cuban cuisine, Cuban Mojo Chicken is an irresistible dish that promises to elevate any meal. To ensure your chicken is bursting with citrusy goodness and perfectly tender, consider these helpful tips:

Choose the Right Chicken

For optimum flavor, I recommend using bone-in, skin-on chicken thighs. They bring juiciness and absorb the mojo marinade beautifully. If you’re opting for boneless pieces, make sure to reduce the marinating time to avoid drying them out.

Master the Mojo Marinade

The key to an unforgettable Cuban Mojo Chicken lies in its marinade. Use fresh garlic for an aromatic punch—trust me, it’s worth the extra effort! Combine it with sour orange juice, or you can mix equal parts of fresh lime and orange juice if sour oranges are unavailable. Don’t skip the cumin; it provides a distinct warmth that perfectly complements the other flavors.

Marinating Time

Aim for at least four hours of marinating time, but overnight is even better. This allows the flavors to penetrate deeply into the chicken, ensuring each bite is mouthwatering.

Cooking to Perfection

For the best result, use a mix of stove and oven cooking. Start on the stovetop to get a nice sear, then transfer to the oven to finish cooking. A meat thermometer should read 165°F when done, ensuring that your chicken is juicy without being overcooked.

With these tips in hand, you’re well on your way to crafting the perfect Cuban Mojo Chicken that your friends and family will rave about. Enjoy the culinary journey!

  • Total Time: 24 hours, 15 minutes
  • Yield: 6 servings 1x
  • Diet: Gluten-Free

Description

A flavorful dish featuring marinated chicken thighs and legs, served with roasted yams and bell peppers.

Ingredients

Scale
  • 3 pounds bone in chicken thighs and legs
  • 1/2 cup cilantro stems and leaves, chopped
  • 1 tablespoon fresh mint leaves (optional)
  • 2 teaspoons oregano, dried
  • 2 tablespoons orange zest, about 2 oranges
  • 1 teaspoon lime zest, 1 lime’s worth
  • 1/2 cup fresh juice – orange & lime combined (juice the zested orange and the lime)
  • 6 garlic cloves
  • 2 teaspoons salt (adjust to taste, we use mineral salt. Table salt will be saltier)
  • 1/2 teaspoon pepper
  • 1 1/2 teaspoons cumin, ground
  • 1/3 cup olive oil
  • 1 yam, cut into 1/2 inch cubes, about 3 cups chopped
  • 1 large onion, cut in large wedges
  • 2 bell peppers, sliced into 1 inch thick pieces
  • Garnish: cilantro, lime wedges, zest

Instructions

  1. Zest oranges and lime, then add to a food processor or blender along with juice from lime and orange, cilantro, mint, garlic, oil, salt, pepper, and cumin. Blend together until mostly smooth.
  2. Set aside 1/4 cup of the marinade to use on the chicken while baking.
  3. Pour the larger portion of the marinade over the chicken in a sealable container, making sure it is well distributed. Marinate for 6 – 24 hours in the refrigerator; at a minimum, marinate for at least one hour. Whip the marinade up in the morning and it will be ready by dinner!
  4. Remove the pieces of chicken from the marinade. Scrape the marinade off of the skin side of the chicken. Lay on a parchment lined sheet pan, skin side up, and pat the top of the pieces dry with a paper towel. Brush the bare chicken with a light coating of olive oil to ensure a crisp golden brown exterior.
  5. Toss the peppers, onions, and yams with a little oil and a sprinkle of salt, and arrange around the chicken in the pan.
  6. Bake in the top third of the oven for 30 minutes.
  7. Brush the reserved 1/4 cup of marinade over the chicken and veggies and bake for another 15 minutes until chicken is golden brown, registering 185F. (175F is safe, but 185 will be more tender, and thighs and legs will retain their juicy goodness.)
  8. Serve with more zest and lime juice, and fresh cilantro.
