Vegan Apple Loaf

Description

A delicious vegan apple loaf that’s perfect for breakfast or as a snack.


Ingredients

Scale
  • 1/2 cup vegan butter (can sub regular)
  • 2 eggs
  • 1/3 cup sugar (can also use coconut sugar)
  • 1/2 cup almond milk (can use any other milk alternative)
  • 1 tsp vanilla extract
  • 3 cups almond flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup honey crisp apples (diced)
  • 1/3 cup vegan sugar
  • 1 tsp cinnamon

Instructions

  1. To start, preheat the oven to 350F and prepare a loaf pan by coating it with non-stick spray and lining it with parchment paper. I like to do both just to ensure nothing sticks.
  2. Next, in an electric mixer, add in the eggs and vegan sugar and beat on high-speed for about 2 minutes or until the mixture is white and creamy.
  3. Then, gradually add in the melted vegan butter, almond milk and vanilla extract next and mix until combined.
  4. Next, add in the almond flour, salt, baking powder and baking soda and mix with a spatula until just combined.
  5. Fold in the diced apples last.
  6. Then, pour about 2/3 of the batter into the prepared loaf pan, or just enough to cover the bottom. Next, sprinkle 2/3 of the cinnamon and sugar mixture over the first layer until well coated and repeat with the remainder of the apple batter.
  7. Lastly, sprinkle the remainder of the cinnamon and sugar on top. Using a knife or toothpick make zig-zag motions until the cinnamon and sugar is well mixed in. This helps create a delicious crunchy topping.
  8. Bake the loaf in the oven for 55 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool completely before taking out of the pan and slicing into.

Notes

  • This loaf is best enjoyed fresh, but can be stored in an airtight container for a few days.
  • If you’re not vegan, you can substitute regular butter and eggs.
