Instructions
- Preheat the oven: Start by preheating your oven to 425°F (220°C). A hot oven is key for crisping without burning.
- Peel and slice the sweet potatoes: Peel the sweet potatoes and cut them into uniform matchsticks, about 1/4 inch thick. The more even your slices, the more evenly they’ll bake.
- Soak in cold water (optional but recommended): Soak the fries in cold water for at least 30 minutes. This draws out excess starch and helps them become crispier in the oven. Drain and dry thoroughly with a clean towel.
- Toss with cornstarch and seasonings: In a large bowl, toss the fries with cornstarch until lightly coated. Then drizzle with olive oil and sprinkle in the paprika, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
- Arrange on baking sheet: Line a large baking sheet with parchment paper. Spread the fries in a single layer, making sure none are touching—this prevents steaming and promotes crispiness.
- Bake and flip: Bake for 15 minutes, then flip each fry individually. Return to the oven and bake for another 10–15 minutes, or until golden and crispy around the edges.
- Serve immediately: Serve hot out of the oven with your favorite dipping sauces—garlic aioli, spicy ketchup, or even a simple yogurt dip.
