  • 1/4 cup cream cheese, softened
  • 1 tablespoon honey
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup chopped walnuts (optional, for added crunch)
  • Fresh thyme sprigs, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened goat cheese, cream cheese, honey, lemon juice, fresh thyme, garlic powder, salt, and pepper. Mix well until creamy and smooth.
  3. Prepare the chicken breasts by placing them on a cutting board. Using a sharp knife, carefully slice each breast horizontally to create a pocket.
  4. Stuff each chicken breast generously with the blueberry and cheese mixture, avoiding overstuffing.
  5. In a large oven-safe skillet, heat the olive oil over medium-high heat. When the oil shimmers, carefully place the stuffed chicken breasts in the skillet. Sear for about 4-5 minutes until golden brown on one side.
  6. Flip the chicken breasts over and add fresh blueberries and chopped walnuts around them in the skillet.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C) and juices run clear.
  8. Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.
