- 1 cup fresh blueberries (plus extra for garnish, if desired)
- 4 oz goat cheese, softened
- 1/4 cup cream cheese, softened
- 1 tablespoon honey
- 1 teaspoon fresh lemon juice
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1/4 cup chopped walnuts (optional, for added crunch)
- Fresh thyme sprigs, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the softened goat cheese, cream cheese, honey, lemon juice, fresh thyme, garlic powder, salt, and pepper. Mix well until creamy and smooth.
- Prepare the chicken breasts by placing them on a cutting board. Using a sharp knife, carefully slice each breast horizontally to create a pocket.
- Stuff each chicken breast generously with the blueberry and cheese mixture, avoiding overstuffing.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. When the oil shimmers, carefully place the stuffed chicken breasts in the skillet. Sear for about 4-5 minutes until golden brown on one side.
- Flip the chicken breasts over and add fresh blueberries and chopped walnuts around them in the skillet.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C) and juices run clear.
- Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.
- Garnish with fresh thyme sprigs and additional blueberries if desired. Serve warm and enjoy your gourmet-style meal!
