Ingredients

  • 1 pound cooked chicken breast, finely chopped or shredded
  • 1 cup frozen spinach, thawed and drained
  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup shredded Monterey Jack cheese
  • ½ cup diced red bell pepper
  • ¼ cup diced green onion
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 1012 flour tortillas (6-inch size) or egg roll wrappers
  • Oil for frying (vegetable or avocado oil)

Instructions

  1. Prep the Filling: Heat olive oil in a large skillet over medium heat. Add chopped chicken and cook for a few minutes until it starts to brown slightly. Stir in the red bell pepper, green onion, and spinach, cooking for another 2–3 minutes.
  2. Season and Stir: Add the black beans, corn, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Stir well and let everything cook together for another 3–4 minutes until the vegetables are softened and fragrant.
  3. Add the Cheese: Turn off the heat and stir in the shredded Monterey Jack cheese. The residual heat will melt the cheese, helping the mixture bind together.
  4. Assemble the Eggrolls: Place a tortilla or egg roll wrapper on a flat surface. Add 2–3 tablespoons of filling to the center. Fold in the sides and roll tightly, sealing the edge with a bit of water.
  5. Fry to Perfection: Heat oil in a deep skillet or frying pan over medium-high heat (about 350°F/175°C). Fry 3–4 rolls at a time for 2–3 minutes per side until golden brown and crispy. Remove with tongs and place on paper towels to drain excess oil.
  6. Serve and Dip: Slice the rolls diagonally and serve hot with your favorite dipping sauce – avocado ranch, salsa, or sour cream are all great choices.
