- 2 pounds boneless, skinless chicken thighs
- 1/2 cup bourbon
- 1/2 cup soy sauce
- 1/2 cup brown sugar, packed
- 1/4 cup ketchup
- 1 tablespoon apple cider vinegar
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 green onions, sliced (for garnish)
Instructions
- Place the chicken thighs in the bottom of the crock pot.
- In a medium bowl, whisk together bourbon, soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ground ginger, and red pepper flakes until combined.
- Pour the sauce mixture over the chicken thighs in the crock pot.
- Cover and cook on low for 6 hours or until chicken is tender and cooked through.
- Remove chicken and shred or cut into bite-size pieces. In a small bowl, mix cornstarch with water to create a slurry.
- Stir slurry into the sauce in the crock pot.
- Return chicken to the pot and cook for an additional 10 minutes on high until sauce thickens.
- Serve hot, garnished with sliced green onions.

- This dish pairs well with rice or noodles.
- You can adjust the level of spiciness by adding more or less crushed red pepper flakes.
- For added flavor, marinate the chicken in the sauce overnight before cooking.
