- 1 1/2 cups dried black-eyed peas, rinsed
- 1 pound smoked sausage, sliced
- 1 medium onion, chopped
- 1 green bell pepper, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 cups cooked rice
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Rinse the dried black-eyed peas and set aside.
- In the crock pot, combine black-eyed peas, smoked sausage, onion, green bell pepper, celery, and garlic.
- Pour in chicken broth and stir in smoked paprika, black pepper, and salt.
- Cover and cook on low for 6 hours, or until peas are tender.
- Stir in cooked rice and let warm for about 10 minutes.
- Garnish with fresh parsley if desired, and serve hot.
