Description

Ingredients

  • 1 1/2 cups dried black-eyed peas, rinsed
  • 1 pound smoked sausage, sliced
  • 1 medium onion, chopped
  • 1 green bell pepper, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 cups cooked rice
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Rinse the dried black-eyed peas and set aside.
  2. In the crock pot, combine black-eyed peas, smoked sausage, onion, green bell pepper, celery, and garlic.
  3. Pour in chicken broth and stir in smoked paprika, black pepper, and salt.
  4. Cover and cook on low for 6 hours, or until peas are tender.
  5. Stir in cooked rice and let warm for about 10 minutes.
  6. Garnish with fresh parsley if desired, and serve hot.
