This moist and delicious Pear Almond Cake is perfect for breakfast, dessert, or an afternoon snack.

- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- ½ cup buttermilk (or milk with 1 teaspoon vinegar added)
- 1 ½ cups ripe pears, peeled and diced (about 2 medium pears)
- ½ cup sliced almonds (for topping)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla and almond extracts until combined.
- Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture, mixing just until combined. Be careful not to overmix.
- Gently fold in the diced pears until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Sprinkle the sliced almonds evenly over the top.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent it with aluminum foil during the last 15 minutes of baking.
- Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Once cooled, dust the top of the loaf with powdered sugar before slicing. Serve warm or at room temperature, perfect for breakfast, dessert, or an afternoon snack.
